Introduction

As the restaurant's name indicates, it specializes in Hitsumabushi, a Nagoya’s local unagi (freshwater eel) dish which is cooked rice topped with BBQ unagi and special sauce. The strictly-selected unagi is grilled over Binchotan charcoal; the heat from the charcoal brings out the best flavor and softness of unagi. They also use the highest-grade rice, and the sauce is made from the highest-grade Tamari soy sauce and sugar. Enjoy.
